Attempts to understand how salt got such a bad press require diligent investigation. With a careful eye and nose to see or smell the difference between original research and PR-style mentions from worthless media influencers.

I believe one reason given was because they checked blood pressure after taking salt and discovered BP went up. Shock, horror! So everybody was warned to CUT DOWN SALT. Especially with those with higher BP. But, er, they didn’t notice that yes, BP went up, but quickly it went down again. No doubt it actually went even lower.

I remember it all happening. There wasn't much in the way of blind trials, but it quickly became established fact because salt was held to be why concerned parents (aka lefty health fascists) couldn't stop their children consuming the snacks being advertised during unsuitable, probably American, TV cartoons rather than the carrot sticks they had left out for them while they went off to have sex with their fitness instructor at the gym.

I know. I was one of those fitness instructors.
